The Instant Classic
Our menu allows guests to experience the most extraordinary fish and seafood available in the world on that day. Signatures include flawlessly executed crudo and other “Delicacies of the Sea” to begin the meal, along with a whole fish program that no other restaurant can match. The menu also boasts an array of Antipasti, Insalata, and Macaroni; a remarkable selection of Snake River Farms beef; and famous classics from CARBONE, such as the Spicy Rigatoni Vodka.
The Experience
Guests enter the world of CARBONE RIVIERA through a mosaic portal that opens onto a soaring citrus grove. This dreamlike path gives way to the calm allure of the dining room, where dramatic views are framed by arched windows and our service captains orchestrate the unforgettable nightly. These consummate hosts are virtuosos of the table-side presentation, guided by a simple mantra: “I want to get you exactly what you want tonight.”
The Scene
Designed by the acclaimed Martin Brudnizki, CARBONE RIVIERA takes its cues from mid-century Mediterranean elegance and the sun-drenched ease of Picasso’s Vallauris years. These inspirations are in every detail, from the bountiful display of Amalfi lemons at the entrance to the terra cotta and azure tones that define the palette. Inside, guests dine surrounded by original works from Picasso, Renoir, and Miró. Outside, two gorgeous terraces extend the experience — including a dining dock lined with olive trees that evokes the waterfront decks of Venice.
Buona Fortuna
The 33-foot Riva “Anniversary” yacht is the emblem of CARBONE RIVIERA. Poised to become one of Las Vegas’ most coveted luxury experiences, this feature reimagines one of the city’s most beloved landmarks into a European escape, inviting select guests to cruise the lake as the Fountains of Bellagio dance around them.
